Millet Porridge (Gluten Free Savoury)

Ingredients :

1 cup millet (washed & drained)

3 cups water

1  carrot (diced)

¼ of a pumpkin  (diced)

1 teaspoon miso (optional)

 

Method:

  1. Boil water and millet together for 15 mins
  2. Add diced carrots and pumpkin
  3. Continue to boil over slow heat till soft
  4. Remove from fire and add a teaspoon of miso to flavour

Alternatively, instead of using carrots and pumpkin, add a tablespoon of raisins or a teaspoon of honey to sweeten.


 

Millet “Mashed Potatoes”

Ingredients:

2 cups millet

1 small cauliflower (approx. 2 cups of flowerettes)

¼ teaspoon sea salt

7 cups of water

extra water for mashing

Method:

  1. Lightly roast millet
  2. Bring water to a boil and add millet, cauliflower and salt
  3. Cover and simmer 25 minutes
  4. Puree in a food mill or food processor, adding a little water, if necessary,
    For a consistency that’s surprisingly akin to mashed potatoes.

 

Multi Grain Porridge

Ingredients :

¼  cup of millet, buckwheat, pearl barley and brown rice

1 cup diced carrots

1 cup diced cauliflower

3 tablespoon chickpeas (soaked & pre boil till soft)

4 cups of water

 

Method:

  1. Boil all grains with water till soft
  2. Add in diced carrots , cauliflower & chickpeas to boil
  3. Add a pinch of sea salt or a tablespoon of miso (optional)
